Sofrit pagès: Ibiza’s most typical dish

Sofrit pagès servi dans un plat en terre cuite

Do you know the dish that fed generations of Ibizan farmers? Sofrit pagès is far more than a simple stew. It is Ibiza’s culinary memory on a plate. The Academia de Gastronomía de Ibiza y Formentera has officially recognised it as the island’s most typical dish.

Born on the island’s farms, it was cooked on matanza days (the pig slaughter), when the working days were long and physical. People needed a meal that would keep them going. Sofrit pagès did the job perfectly.

What is actually in it?

A generous mix of meats (chicken, lamb, sometimes rabbit) with potatoes, sobrassada and botifarró. The latter looks like Catalan black pudding but stands out for its typically Ibizan hint of fennel. Everything is slow-cooked in olive oil with a blend of spices: saffron, cinnamon, cloves, paprika and pepper.

The method follows a precise ritual. First the meats are browned to build a rich base. A sofrito of onion, garlic, peppers and tomato is made. Potatoes, a glass of white wine and stock go in. The sausages join the pot in the last minutes of cooking.
Nothing is wasted: the stock then becomes the base of the first course.

How is it eaten?

Traditionally, sofrit pagès is served as the second course. The first is a soup or rice made with the cooking stock. It is a complete meal that follows farmhouse logic: get the most out of every ingredient.

Surprisingly, this centuries-old dish is still on the menus of the island’s best-known restaurants. Not as a tourist curiosity, but as an everyday dish, served at every village fiesta and family gathering.

Where to try the real thing?

Head for the country restaurants in the island’s interior. Ca’s Pagès in Santa Eulària is considered one of the best. Es Rebost de Can Prats in Sant Antoni and S’Espartar in Sant Josep are also safe bets. These are the places where family recipes are still passed down from mother to daughter.

Sofrit pagès is more than a recipe. It tells the story of rural Ibiza, of red earth and almond trees. A living heritage you taste with every mouthful.
